The crispy oven-fried crust comes from baking the crumb-coated fillets at a high temperature. Creole seasoning gives the crunchy crust its great flavor. Ingredients:
1 cup plus 2 tablespoons crushed corn flakes cereal |
1 1/2 teaspoons salt-free creole seasoning |
1/8 teaspoon salt |
1/4 cup fat-free mayonnaise |
1 tablespoon lemon juice |
1/2 teaspoon hot sauce |
8 (4-ounce) farm-raised catfish fillets |
cooking spray |
8 lemon wedges |
Directions:
1. Preheat oven to 450°. 2. Combine first 3 ingredients in a small bowl, stirring well; set aside. Combine mayonnaise, lemon juice, and hot sauce, stirring well. 3. Brush mayonnaise mixture evenly over both sides of fillets; dredge in cereal mixture. Place fillets on rack of a broiler pan coated with cooking spray. Bake at 450° for 18 minutes or until fish flakes easily when tested with a fork. Serve with lemon wedges. |
