I don't know where I got this recipe, but I've been making it for years. (I've used what milk I have on hand, skim, 2%, or Buttermilk) Everyone is so surprised that it is so tender & juicy when I make it. Such simple ingredients; such yummy chicken.
Ingredients:
2 1/2-3 lbs chicken, cut up, washed
1/4 cup shortening
1/4 cup butter
1/2 cup flour
1 teaspoon salt
1 teaspoon pepper
1 teaspoon paprika
3/4-1 cup milk
Directions:
1. Preheat oven to 425 Degrees F.
2. Melt shortening & butter in a 9x13 baking pan, in oven.
3. In a shallow dish, mix together the flour, salt, pepper, and paprika.
4. Dip chicken in milk and coat completely with dry mixture.
5. Place skin side down in melted butter.
6. Cook uncovered for 30 minutes.
7. Turn chicken over, and cook an additional 30 minutes.
