Bob Blumers recipes for an caramelized onion side dish that is so sweet you'll be tempted to eat them for dessert!!!
Ingredients:
2 medium red onions
1 1 /2 cups chicken stock
2 tbs balsamic venegar
4 sprigs of rosemary and or thyme
salt and pepper to taste
Directions:
1. preheat oven to 400F
2. Peel onions
3. Slice onions in quarters from top to bottom so each quarter includes some of the core to hole it together
4. Set quarters in a small baking dish, pointy side up
5. Season with salt and pewpper, add stock , vinegarand herbs on top
6. Cover tightly with foil and bake 45 minutes
7. Remove foil and bake 30 mins more OR until onions are very caramelized and liquids are reduced to a thick glaze
