this is an adaptation to my Step Mom's recipe- a little less fat is always good! Ingredients:

3/4 teaspoon salt |

1 lb ground beef or 1 lb turkey |
1 large onion |
1 (14 ounce) can fat-free refried beans |
dry enchilada mix |
2 (4 ounce) cans tomato sauce |
1 (4 ounce) can water |
1 1/2 cups cheddar cheese, grated |
1 (4 ounce) can diced mild green chilies (optional) |
Directions:
1. Mix the first 5 ingredients 2. roll into small balls and let sit for 10 minutes. 3. then roll flat and lightly brown the tortillas on a griddle. 4. Saute onion with ground meat. 5. mix enchillada sauce packet with tomato sauce and water. 6. heat beans seperately. 7. in 13x9 pan, lightly spray with non stick cooking spray. Put a small amount of sauce in the bottom of the pan. 8. Take tortilla, smear warmed refried beans, then add ground meat and onion mixture, a drizzle of enchilad sauce, sprinkle tiny bit of cheese and a little of the chili's if desired. 9. roll into a burrito and put into pan. 10. continue with all of the tortillas. Cover with remainder of enchilada sauce. 11. sprinkle with remainder of cheese 12. bake for 1 hour to 1 1/2 or until bubbly. 13. at 350'. 14. Freezes great either baked and or just built and frozen. |
