a hearty warm vegetablebake that can be served as an alternative to carbs alonside baked fish or light meat dishes Ingredients:
1 large sweet potato (scrubed and cubed) |
10 large mushrooms |
2 large zuchuni (chopped in chunks) |
2 large carrots (scrubbed and chopped) |
2 large onions (peeled and quartered) |
1 medium pumpkin (peeled and cube) |
3 gloves of garlic (crushed) |
1 tsb of ginger |
1/4 cup vegetable stock |
2 tablespoon dry herbs |
1 bunch of fresh herbs |
3 tablespoon olive oil |
salt and pepper to taste |
2 tablespoon lemon juice |
Directions:
1. place all the vegetables in a large oven proof dish 2. beat the oil with the ginger and garlic 3. using a kitchen brush coat the vegetabless with the oil mixture 4. sprinkle the salt, pepper and dry herbs on top 5. slowly pour the stock around the vegetables 6. add the herbs bunch 7. cover with foil and bake for 20 minutes 8. after 20 minutes 9. remove foil and bake for 10 more minutes 10. sprinkle with the lemon juice and enjoy |
