Delicious vegetables, can be served as a side dish, or over rice or pasta as a main meal. Top with a bit of grated cheese or mozzerella for a complete meal. Substitute vegetables to your taste. I've used sweet potatoes, trunips, parsnips, white potatoes with success. Ingredients:
2 carrots |
1 onion |
5 mushrooms |
1 red pepper |
2 zucchini, small |
1 tbsp olive oil |
1 tbsp oregano or any fresh herb minced |
Directions:
1. Roughly chop all vegetables and put into large ziplock baggie. Add olive oil and fresh herb. Close baggie and mix well. Pour into baking dish, cover and bake at 400 for 50 minutes to an hour. Serve as a side dish, or over rice or pasta as a main course. |
