Oven Baked Sweet and Savory Brown Rice |

Ingredients:
2 cups brown rice |
6 cups vegetable stock |
1/2 teaspoon ground cinnamon |
1/2 teaspoon ground nutmeg |
1 teaspoon sea salt |
1/2 teaspoon cracked black pepper |
1/2 cup brown sugar |
1 tablespoon minced fresh ginger |
1 cup pitted and chopped fresh dates |
Directions:
1. Preheat the oven to 350 degrees F. 2. Add the brown rice, vegetable stock, cinnamon, nutmeg, salt, pepper, brown sugar, ginger and dates to a metal baking pan and mix with your hands to make sure all of the ingredients are distributed evenly. Cover with aluminum foil and bake for 45 minutes to 1 hour. Remove the pan from the oven, transfer the rice to a serving bowl and serve. 3.
