Here's my favorite way to cook summer squash - a lightened up, oven-baked version of the summer squash my mother used to fry us for dinner. Ingredients:
1 6 zuchini or |
1 medium sized patty pan squash |
salt and pepper |
butter flavored pam |
1/8 scant tsp flour |
Directions:
1. Take either one 6 zuchini or the equivalent weight in patty-pan summer squash, wash and cube into equal-sized pieces. 2. Take a small casserole dish (look in the Asian markets for them), and spray with butter-flavored Pam. 3. Put about 2-3 oz. of squash cubes into the dish. 4. Salt, pepper and dust with flour - just a pinch, no more! 5. Spray down with Pam again. 6. Pop into 425 oven and bake for 20 minutes or until browned. 7. 1 pt or less on WW. |
