Ingredients:
2 lbs red potatoes, cut as long wedges |
1/3 cup olive oil |
1 large onion, chopped |
1 teaspoon coarse kosher salt |
fresh ground pepper |
Directions:
1. Pre-heat oven to 400. 2. Combine ingredients in 9x13 roasting dish. 3. Bake uncovered, stirring occasionally, for 45-50 minutes or until potatoes are soft and golden brown. |
