Oven Baked Pancake With Apples |

Ingredients:
3/4 cup all purpose flour |
1/2 teaspoon salt |
3 tablespoons sugar |
2 large eggs |
1 cup milk |
3 tablespoons unsalted butter, melted |
1 1/2 golden delicious apples |
1/4 teaspoon cinnamon |
Directions:
1. Preheat oven to 425 degrees and generously butter a well seasoned 10 inch cast iron skillet. In bowl sift together flour, salt, and 1 tablespoon sugar. In another bowl, whisk together eggs, milk, and butter. Whisk egg mixture into flour mixture in bowl until combined well. Peel, core, and slice apples. Mix 1 tablespoon sugar and cinnamon. Sprinkle apples slices with cinnamon sugar mixture. Pour pancake mixture into deep baking dish and arrange apple slices evenly on top. Bake pancake 20 minutes. Reduce temperature to 350 degrees and bake pancake 10 minutes more, or until edge is puffed, pancake is golden, and center is set. Sprinkle pancake with remaining tablespoon sugar (or mix with additional cinnamon into remaining tablespoon sugar) and sprinkle over top. Serve immediately. |
