Oven - Baked Cottage Fries |

This was in my Mom's recipes. I tried it and liked them. Ingredients:
2 lg. baking potatoes (about 8 oz. each), scrubbed |
1 tbsp. butter |
1 sm. clove garlic, crushed |
1 tbsp. freshly grated parmesan cheese |
1/4 tsp. paprika |
pepper (freshly ground) to taste |
Directions:
1. Heat oven to 425 degrees. Pour 1/4 cup water into jelly-roll pan. 2. Cut unpeeled potatoes into 1/4 inch slices; arrange in single layer in 3. pan. In small saucepan, over low heat, stir butter with garlic to melt. 4. Brush flavored butter over potatoes; bake 20 minutes. 5. Meanwhile, in small bowl, combine Parmesan, paprika, and pepper. 6. Remove potatoes from oven; heat broiler. 7. Sprinkle cheese mixture over potatoes; broil 2 to 3 minutes until 8. light golden brown. 9. Serve immediately. |
