Oven-baked Buttermilk Chicken |

This is better than frying! Ingredients:
1 envelope lipton onion recipe soup mix |
1 cup all-purpose flour |
2 eggs |
1/2 cup buttermilk |
2 1/2 to 3 lbs chicken, cut into serving pieces |
1/4 cup butter or margarine, melted |
Directions:
1. Preheat oven to 425^ degrees. 2. Combine sonion soup mix with flour; set aside. 3. Beat eggs with buttermilk. 4. Dip chicken in buttermilk mixture, then in flour mixture, coating well. 5. Place in a large shallow baking pan on rack, and chill 30 minutes. 6. Drizzle with butter; then bake 45 minutes or until done. |
