Oven-Baked Beef-Lima Stew |

This is an old recipe we used to have at our grandparents. Its simple and very economical. Prep time includes soaking beans overnight. Ingredients:
1 cup large dry lima beans |
1/4 cup flour |
8 ounces tomatoes, cut up |
1 cup sliced celery |
1 cup sliced carrot |
1/2 cup chopped onion |
1 1/2 teaspoons salt |
1/4 teaspoon worcestershire sauce |
1 bay leaf |
1 lb ground beef |
Directions:
1. Place beans in a large saucepan or Dutch oven; add 4 1/2 cups water. 2. Soak overnight. 3. DO NOT DRAIN. 4. Blend 1/2 cup cold water slowly into flour, stir into beans. 5. Cook and stir till bubbly. 6. Stir in undrained tomatoes, celery, carrot, onion, salt,worcestershire, and bay leaf. 7. Crumble ground beef into beans. 8. Bring mixture to boiling. 9. Bake, covered, at 350 for about 1 1/2 hours, stirring occasionally. 10. Discard bay leaf. 11. Skim off fat. 12. Season to taste wit additional salt and pepper. |
