A moist tropical sensation. Reminding you of a desert Island resort. Ingredients:
8 oz cream cheese -- softened |
1/2 cup margarine -- softened |
1 1/4 cups sugar |
1/4 cup milk |
2 eggs |
1 teaspoon vanilla |
1 3/4 cups flour |
1 teaspoon baking powder |
1/2 teaspoon baking soda |
1/4 teaspoon salt |
10 oz jar apricot preserves |
2 cups flaked coconut |
2/3 cup brown sugar |
1 teaspoon cinnamon |
1/3 cup margarine -- melted |
Directions:
1. Combine cream cheese, 1/2 cup margarine and sugar, mixing 2. at medium speed until well blended. 3. Gradually add milk, mixing well after each addition. Blend in eggs and vanilla extract. 4. Add flour, baking soda, baking powder and salt 5. to cream cheese mixture; mix well. 6. Pour half of batter into greased and floured 13x9-inch baking pan. Dot with preserves; cover with remaining batter. 7. Bake at 350 degrees 35 to 40 minutes or until wooden toothpick inserted in center comes out clean. 8. Combine coconut, brown sugar, cinnamon and melted margarine; mix well. 9. Spread on cake; broil 3 to 5 minutes or until golden brown. |
