I found this recipe off of a Soy Flour package from Bob Red Mill. They are pretty tasty muffins and a little healthier then the average. Ingredients:
1/3 cup soy flour |
1/3 cup brown sugar |
1/3 cup cornmeal |
1 cup whole wheat flour |
1/4 cup wheat germ |
3/4 teaspoon salt |
1 cup ground almonds |
1 teaspoon baking soda |
2 eggs, beaten |
1 cup yogurt |
1 teaspoon vanilla |
1/3 cup oil |
1 orange, zest of |
1/3 raisins or 1/3 currants |
1/2 cup dried apricot, diced |
Directions:
1. Preheat oven to 350 degrees. 2. Mix dry ingredients and dried fruit together in a large bowl. 3. Combine liquid ingredients and stir into dry ingredients just until moistened. 4. Batter should be lumpy. 5. Fill oiled or paper-lined muffin tins 2/3 full. 6. Bake in preheated 350 degree oven for 20-25 minutes. |
