OUT OF THIS WORLD ZUCCHINI SOUP This recipe came from an estate sale. I obtained it when I purchased the family collection from the Watson Estate in Greenville, Texas in 1987.
Ingredients:
2 teaspoons olive oil
1 medium white onion chopped
1/2 pound zucchini sliced
2 teaspoons salt
1/4 cups vegetable stock
1/2 teaspoon nutmeg
1/8 teaspoon freshly ground black pepper
1/2 pound tofu
1 tablespoon olive oil
1/4 cup vegetable broth
Directions:
1. Sauté first four ingredients then add stock, nutmeg and pepper.
2. Cover and simmer 20 minutes then remove from heat and cool 5 minutes.
3. Blend tofu, oil and vegetable broth in blender or food processor until smooth and creamy.
4. Stir blended tofu mixture into sautéed vegetables then heat but do not boil.
