OUT OF THIS WORLD ZUCCHINI SOUP This recipe came from an estate sale. I obtained it when I purchased the family collection from the Watson Estate in Greenville, Texas in 1987. Ingredients:
2 teaspoons olive oil |
1 medium white onion chopped |
1/2 pound zucchini sliced |
2 teaspoons salt |
1/4 cups vegetable stock |
1/2 teaspoon nutmeg |
1/8 teaspoon freshly ground black pepper |
1/2 pound tofu |
1 tablespoon olive oil |
1/4 cup vegetable broth |
Directions:
1. Sauté first four ingredients then add stock, nutmeg and pepper. 2. Cover and simmer 20 minutes then remove from heat and cool 5 minutes. 3. Blend tofu, oil and vegetable broth in blender or food processor until smooth and creamy. 4. Stir blended tofu mixture into sautéed vegetables then heat but do not boil. |
