OUT OF THIS WORLD BREAKFAST POTATO PIE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Victor Estate in Allen, Texas in 1981. Ingredients:
4 cups diced ham |
1-1/2 cups frozen shredded hash brown potatoes thawed |
1/4 cup chopped green peppers |
1/4 cup chopped red peppers |
1/2 cup chopped white onion |
1/2 cup chopped fresh mushrooms |
1 cup shredded sharp cheddar cheese |
1/2 cup shredded parmesan cheese |
1 cup sour cream |
1 cup cottage cheese |
8 eggs |
1 teaspoon white pepper |
1 teaspoon thyme |
1 teaspoon paprika |
Directions:
1. Mix all ingredients together except paprika in a large bowl. 2. Bake in two pie plates for 1 hour at 350. 3. Sprinkle with paprika. 4. Serve with sour cream and chopped fresh chives. |
