Yup, another soup from the Fresh restaurant in Toronto. Who says vegan food is boring?? Browned onions, spices, sweet potatoes and split peas round out a delicious and hearty meal for everyone to enjoy. Ingredients:
1/3 cup water |
1 large yellow onion, diced |
4 cloves garlic, minced |
1/4 cup minced ginger |
1 thai chili, minced |
2 tbsp curry powder |
1 cup diced tomatoes, with juice |
1/2 large sweet potato (about 3oz), peeled and chopped |
1 cup yellow split peas |
15 cups roasted vegetable stock (roasted-veggie-stock.html >rich roasted veggie stock) |
1/4 tsp kosher salt |
1/2 tsp black pepper |
cayenne pepper, for serving |
Directions:
1. Heat water in a large pot over medium-high heat. 2. Add onion, garlic, ginger and chili. Cook for 5-7 minutes, until soft and fragrant. 3. Add curry powder and cook 1 minute, stirring constantly. 4. Pour in tomatoes, sweet potato, peas and stock, bring to a boil. 5. Reduce heat and simmer, partially covered, 1 - 1 1/4 hours, until peas are tender. 6. Remove from heat, stir in salt and pepper. 7. Garnish each bowl with a sprinkle of cayenne to taste. |
