Our Favorite Garlicky Cheesey Roasted Potatoes |

Came up with this one of those days that I was in Mad Scientist mode in the kitchen! We love them, and they are requested often by friends as well. Ingredients:
small bag red skinned new potatoes |
1/2 white onion, chopped |
1/2 red pepper, chopped (optional) |
3 t chopped garlic |
zest of 1/2 lemon |
juice from 1/2 lemon |
4 or 5 t worchestershire |
3 t evoo |
1/2 stick melted margarine (or butter) |
seasoned salt |
garlic pepper |
1/2 b bacon |
1 c shredded cheese - your favorite flavor. i use colby jack or cheddar, usually |
fresh chives |
Directions:
1. Preheat oven to 450 2. Scrub potatoes and cut into 1-2 inch chunks 3. Cut chunks into bowl of ice cold water 4. Pour water off of potatoes and rinse off excess starch 5. Place in large mixing bowl 6. Add onion, red pepper, garlic, lemon zest and juice, worcestershire, evoo, butter, seasoned salt and garlic pepper 7. Toss to coat well 8. Turn into 9x13 non stick baking pan 9. Cover with foil and bake 60 minutes 10. Meanwhile, brown bacon, drain and crumble 11. Remove potatoes from oven after first 60 minutes 12. Add bacon 13. Drizzle with a little more evoo 14. Return to oven and roast about 10-15 minutes more until brown and edges are crispy 15. Top with fresh chives and cheese 16. Let rest about 5 minutes then serve |
