Especially good with blue corn chips. Ingredients:
1 1/2 cups black beans, drained |
1 cup diced tomato, drained |
1/2 cup sour cream |
1/2 cup grated cheddar cheese |
1 tablespoon tabasco chipotle pepper sauce |
salt and pepper, to taste |
chopped cilantro, for garnish |
Directions:
1. Place all in ingredients except the cilantro in a large, microwave-safe bowl. 2. Heat the mixture for about one minute, or. 3. until cheese melts. 4. Place the mixture in a blender jar. 5. Blend until smooth. 6. Re-heat in microwave as necessary, add cilantro. |
