From the Graham Kerr Cookbook. Ingredients:
4 large potatoes |
1 medium onion, chopped |
4 tablespoons clarified butter |
1 1/4 cups tomato sauce |
salt and pepper |
3/4 cup water |
Directions:
1. Peel potatoes, if desired, and slice 1/2 thick. 2. Heat butter in a saucepan. Add onion and cook until golden brown. 3. Add potatoes, tomato sauce and water. Season to taste. 4. Cover and simmer until potatoes are tender, about 30 minutes. |
