This is a spicy grilled fish mousse and can be eaten as a snack or with bread or rice as part of a meal . Ingredients:
500g mackerel - cleaned , skinned and flaked |
1 c heavy coconut milk |
sugar and salt to taste |
coconut leaves , cut into 2 or 3 pcs |
some toothpicks |
make paste |
4 chilli padi , sliced |
3 tsp shrimp paste |
1 pc fresh tumeric |
1 stalk lemongrass, finely sliced |
1 slice galangal , chopped |
3 cloves garlic , sliced |
4 shallots , sliced |
4 candlenuts, roasted |
Directions:
1. Mix everything together in a bowl . 2. Take 1 tbsp of mixture at a time and keep inside the coconut leaves . 3. Cover and overlap it with another coconut leaf and leaving for them to expand , leave some space and secure it on both sides with a toothpick . 4. Grill it over charcoal fire . |
