Orzo with Tomatoes and Pesto |

Prep: 5 minutes; Cook: 12 minutes. Chop the tomato and the green onions while the orzo is cooking. Ingredients:
2/3 cup uncooked orzo (rice-shaped pasta) |
2 1/2 tablespoons pesto (such as classico) |
1 cup chopped seeded tomato |
3 tablespoons thinly sliced green onions |
1/4 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
Directions:
1. Cook orzo according to package directions, omitting salt and fat. Drain and transfer to a serving bowl. Add pesto and remaining ingredients; toss well. |
