Orzo With Tomatoes And Arugula |

This is a great salad for summer cooking. Ingredients:
1 cup orzo |
1/3 cup olive oil |
2 tsp. balsamic vinegar plus additional to taste |
2 tomatoes, seeded and diced |
2 cups arugula, chopped |
1/4 cup basil, chopped |
1/4 cup pine nuts, lightly toasted |
salt and pepper to taste |
Directions:
1. Cook orzo according to package directions 2. In mixing bowl, add orzo, oil and balsamic vinegar and mix 3. Cool to room temp. 4. Stir in tomato, arugula, basil, pine nuts and salt and pepper 5. Add additional balsamic vinegar if desired |
