Frozen peas, minced tarragon, and fresh lemon juice are tossed with orzo for a speedy side of Orzo with Tarragon and Peas . Ingredients:
3/4 cup uncooked orzo |
1 tablespoon butter |
2 1/2 cups frozen peas |
1/4 cup fat-free, lower-sodium chicken broth |
2 tablespoons minced tarragon leaves |
1 tablespoon fresh lemon juice |
1/2 teaspoon black pepper |
3/8 teaspoon salt |
Directions:
1. Cook pasta according to package directions, omitting salt and fat. 2. Melt butter in skillet over medium heat; cook 1 minute or until lightly browned. Add peas; cook 1 minute or until thoroughly heated. Stir in orzo, chicken broth, tarragon, lemon juice, pepper, and salt. |
