Orzo With Pesto Mayonnaise And Broccoli |

Ingredients:
3/4 cup uncooked orzo (rice-shaped pasta) |
3 cups small broccoli florets |
1/3 cup low-fat mayonnaise |
3 tablespoons commercial pesto |
1/2 teaspoon salt |
1/8 teaspoon black pepper |
1/3 cup diced red bell pepper |
Directions:
1. Cook orzo according to package directions, omitting salt and fat. Rinse and drain well. 2. Arrange broccoli in a steamer basket over boiling water. Cover and steam 3 minutes or until crisp-tender. 3. Combine mayonnaise and next 3 ingredients in a bowl, stirring well. 4. Combine orzo, broccoli, red pepper, and pesto mixture in a large bowl. Serve at room temperature. |
