Orzo With Parmesan and Basil |

Great with chicken or fish Ingredients:
3 tablespoons butter |
1 1/2 cups orzo pasta |
3 cups chicken broth |
1/2 cup parmesan cheese |
6 tablespoons basil, chopped (or 1-1/2 tsp dried) |
salt |
fresh ground pepper |
Directions:
1. Melt butter in skillet over medium high heat. Add orzo and saute 2 minutes, until slightly brown. 2. Add broth and bring to a boil. reduce heat, cover and simmer until orzo is tender and liquid is absorbed, about 20 minutes. Mix in parmesan and basil. Season with salt and pepper. 3. Variation: for a creamier pasta dish, add 2 T plain yogurt or whipping cream to the dish. |
