Orzo with Basil, Roasted Pepper, and Feta |

Ingredients:
1 cup orzo, uncooked |
1/4 cup diced roasted sweet red pepper in water |
1/4 cup crumbled feta cheese |
1/4 cup finely chopped fresh basil or 2 1/2 tablespoons dried basil |
1/4 teaspoon salt |
1/8 teaspoon ground pepper |
Directions:
1. Cook pasta according to package directions, omitting salt and fat. Drain, reserving 2 tablespoons cooking liquid. Combine pasta, 2 tablespoons cooking liquid, sweet red pepper, and remaining ingredients in a serving bowl; toss gently. Serve immediately. |
