This recipe is meant to be low-cost, low-fat and low-calorie. Easy to put together and can be made ahead of time. Serves a lot. Ingredients:
1 lb orzo pasta |
1 1/2 cups spicy hot v8 |
2 teaspoons freshly grated lemon peel |
1/3 cup lemon juice |
1/3 cup olive oil |
1 tablespoon garlic, chopped |
3/4 teaspoon salt |
3/4 teaspoon pepper |
1 1/2 lbs tomatoes, chopped |
1 large english cucumber, chopped |
1 bunch green onion, chopped |
Directions:
1. Cook orzo as directed on box. 2. Drain well. 3. Place in a large bowl and mix the rest of the ingredients together and toss gently to mix. 4. Cover and refrigerate. 5. Note: I add a little more lemon and garlic. |
