Ingredients:
3/4 cup(s) feta, crumbled |
freshly ground pepper |
1 lemon - juice and zest |
1/4 cup(s) olive oil |
1/2 pound(s) orzo |
1/4 cup(s) pinenuts, toasted |
1/4 teaspoon(s) salt |
1/2 cup(s) scallions, green parts only, thinly sliced |
Directions:
1. Cook orzo. In a medium bowl, whisk the lemon juice, zest, olive oil, salt and a few grindings of pepper. Add orzo to bowl and let cool. Add remaining ingredients. Salt and pepper to taste. |
