Great orzo salad Ingredients:
1 cup uncooked orzo |
2 cups chopped fresh basil |
1/2 cup chopped oil packed sundried tomatoes, drained |
3 tblsp chopped red onion |
3 tblsp chopped pitted kalamata olives |
1/2 tsp freshly ground pepper |
1/4 tsp salt |
1 6 oz jar marinated artichoke hearts, undrained |
3/4 cup feta cheese |
Directions:
1. Cook orzo according to directions. Drain, rinse with cold water. Combine orzo & next 6 ingredients in a large bowl. Drain artichokes, reserving marinade. Coarsely chop artichokes & add them & reserved marinade to orzo mixture, tossing gently to coat. Sprinkle with feta 2. cheese & toss again. Drizzle with olive oil if it is too dry. |
