When I first started my restaurant I ran out of Italian rice. I used this in a pinch and everyone loved it. So much in fact that it replaced real risotto. Just be careful not to over cook the Orzo. Leftovers taste great as well and can be formed into cakes and breaded pan fried and served the next day. Ingredients:
1 small bag orzo |
1-2 cups cream |
about 1 cup parmesan cheese |
salt and pepper |
Directions:
1. Cook the orzo till it is al dente and then strain. 2. Place in a sauce pan or pot and add cream and bring to boil. 3. Add cheese and stir until melted. 4. Season to taste with salt and pepper and serve |
