i really do not care for rice so this is my take off on traditional risotto. Ingredients:
1 (1 lb) box orzo pasta |
2 cups chicken broth |
1 tablespoon finely minced garlic |
1 ounce finely shredded parmigiano |
1 ounce finely shredded asiago cheese |
2 tablespoons unsalted butter |
salt and pepper |
Directions:
1. cook orzo in large pot of boiling,salted water according to package directions. 2. drain and rinse under cold water. 3. transfer orzo into large saucepan and add broth and garlic. 4. simmer and stir till stock is absorbed. 5. stir in cheeses,and butter. 6. season with salt and pepper to taste. 7. serve immediatly. |
