Lovely easy salad for summer bbqs. Feel free to add to the salad to suit your tastes, it is easily adaptable. Ingredients:
1 cup dry orzo pasta |
1 (15 ounce) can chickpeas |
1/4 cup goat cheese |
2 teaspoons grated lemon rind |
2 tablespoons lemon juice |
4 tablespoons olive oil |
1 tablespoon fresh oregano, chopped |
1 tablespoon fresh chives, chopped |
salt and pepper |
1 garlic clove, minced |
1 teaspoon dijon mustard |
Directions:
1. Cook orzo until tender. 2. Drain chickpeas. 3. In a large bowl, whisk lemon juice, lemon rind, oil, garlic, mustard and herbs. Add chickpeas. Let sit a few minutes. Add the drained orzo. 4. Crumble in the goats cheese. 5. Let rest for 15 minutes before serving. May be served warm or room temperature. |
