Orzo Chickpea Salad

Lovely easy salad for summer bbqs. Feel free to add to the salad to suit your tastes, it is easily adaptable.
Ingredients:
1 cup dry orzo pasta
1 (15 ounce) can chickpeas
1/4 cup goat cheese
2 teaspoons grated lemon rind
2 tablespoons lemon juice
4 tablespoons olive oil
1 tablespoon fresh oregano, chopped
1 tablespoon fresh chives, chopped
salt and pepper
1 garlic clove, minced
1 teaspoon dijon mustard
Directions:
1. Cook orzo until tender.
2. Drain chickpeas.
3. In a large bowl, whisk lemon juice, lemon rind, oil, garlic, mustard and herbs. Add chickpeas. Let sit a few minutes. Add the drained orzo.
4. Crumble in the goats cheese.
5. Let rest for 15 minutes before serving. May be served warm or room temperature.
