A great alternative to rice or potato sides. Quick and easy and healthier than Rice-A-Roni Ingredients:
2 cups orzo |
4 cups water |
1 tsp oil |
1tsp garlic |
1/2 cup chopped onion |
1/2 cup chopped celery |
1tsp ranch seasoning |
1 chicken bullion cube or 1 cup chicken broth |
1/2 cup chopped mushrooms *(optional) |
1 chopped apple |
2 cups chopped spinach |
salt /pepper to taste * optional |
Directions:
1. Saute 1 cup of Orzo, onion & celery in oil on medium heat until brown (5-10 minutes). Season with garlic 2. Add remaining Orzo, water and all other ingredients (except spinach). Once water is boiling, reduce heat to low-medium and simmer 25 minutes until Orzo is tender. 3. Add spinach & stir. Let simmer 3 minutes, then serve. |
