1 cup orzo pasta |
4 cups broccoli florets |
1/2 cup marinated artichoke hearts, coarsley chopped |
6 ounces canned ripe olives, chopped |
2 medium tomatoes, chopped |
2 scallions, chopped |
2 tablespoons olive oil |
3 tablespoons red wine vinegar |
1/4 teaspoon garlic salt |
1/4 teaspoon pepper |
1 cup diced cooked chicken |
6 cups mixed salad greens |
Directions:
1. In a large pot of boiling salted water, cook orzo, 6 minutes. Add broccoli to pot and cook 4-5 minutes longer. Drain. 2. Add artichoke hearts, olives, tomatoes, scallions, oil, vinegar, garlic salt, pepper and chicken to the pot, tossing well. 3. Serve on mixed salad greens. |
