This is a recipe that I made up one day inspired by Chile Rellano. Its very simple to make and a great way to spice up scrambled eggs. I usually make this on the weekends for my family. Ingredients:
1 dozen egg |
1 (4 ounce) can chopped green chilies |
1 cup shredded monterey jack cheese |
3 flour tortillas |
1 tablespoon butter |
Directions:
1. In a medium sized bowl add in all the eggs and the green chiles and whisk together and set aside. 2. In a large skillet add butter over medium heat and when melted add in the egg mixture and start scrambling the eggs until half way done. then add in the cheese and take the flour tortillas and start tearing them up into bite size pieces and add to the mixture and keep scrambling until egg is completely cooked. 3. You can serve this with your favorite salsa if you like. O'LE! |
