Oriental Sweet and Sour Sauce |

This is from the Joy of Cooking. I put this over my recipe for Hawaiian Meatballs. Ingredients:
2 tablespoons butter, melted |
1 cup chicken broth |
1 cup green pepper, diced |
6 slices pineapple, diced and canned |
2 tablespoons cornstarch |
1/2 cup chicken broth |
2 tablespoons soy sauce |
1/2 cup vinegar |
3/4 cup pineapple juice |
1/2 cup sugar |
1/2 teaspoon salt |
1/4 teaspoon ginger |
Directions:
1. Mix together paste ingredients and set aside. 2. Melt butter in a heavy pan. 3. Add chicken broth, diced green pepper, and pineapple. 4. Cover and simmer for 5 minutes. Add the cornstarch paste and the finishing sauce ingredients. 5. Simmer, stirring constantly, until the mixture thickens. |
