This is a refreshingly different and easy salad that I have made many times. It comes from an old cookbook of mine entitled The Complete Encyclopedia of Chinese Cooking. Ingredients:
1 1/2 lbs fresh baby spinach leaves |
2 tablespoons sesame oil |
1 teaspoon sugar |
2 tablespoons rice wine vinegar |
3 tablespoons soy sauce |
1 teaspoon dijon mustard |
1 teaspoon toasted sesame seeds |
Directions:
1. Place washed and dried spinach in a large bowl. 2. Combine sesame oil, sugar, vinegar, soy sauce, mustard and sesame seeds. 3. Pour over spinach. 4. Toss to coat. 5. Let set 5 minutes. 6. Toss again. 7. Serve. |
