Ingredients:
4 ounces uncooked chinese-style noodles |
1/4 cup chopped green onions (about 1) |
1 red bell pepper, thinly sliced |
2 tablespoons low-sodium soy sauce |
2 tablespoons water |
2 tablespoons peanut butter |
2 tablespoons grated peeled fresh ginger |
1/4 teaspoon crushed red pepper |
Directions:
1. Cook noodles according to package directions, omitting salt and fat. Drain; transfer to a large bowl. Add green onions and bell pepper; set aside, and cool slightly. 2. Combine soy sauce and remaining 4 ingredients; stir well. Pour soy sauce mixture over noodles, tossing well. Serve warm or at room temperature. |
