Oriental Gingered Apple Salad

This luscious salad (created by my mother) combines crisp apples, crunchy water chestnuts, chewy dried cranberries and other ingredients with a creamy dressing. It is hard to stop eating this healthy salad!
Ingredients:
3 cups diced unpeeled apples
1 (8 oz) can water chestnuts, drained and diced
3/4 cup finely diced celery
1/2 cup dried cranberries
1/2 cup lowfat vanilla yogurt
1/4 cup light mayonnaise
1/2 tsp. ground ginger
2 tbs. sugar
1/8 tsp. salt
1/4 cup chopped pecans, toasted
Directions:
1. In a bowl, combine apples, water chestnuts, celery, and cranberries.
2. Stir together yogurt, mayonnaise, ginger, sugar, and salt.
3. Pour over apple mixture and toss to coat.
4. Sprinkle with pecans.
