1 tblsp sesame seeds |
2 tblsp sunflower kernels |
3 tblsp cashew or raw peanuts |
1/2 head radicchio lettuce |
2-3 sticks celery |
2-3 spring onions |
425g can whole sweet corn or 300g fresh baby corn |
1/2 cup snow peas |
2cm piece root ginger |
1 tblsp oil |
dash sesame oil |
500g minced chicken |
2 tblsp runny honey |
1 tblsp oyster sauce |
2 tblsp soy sauce |
1 cup mung been srouts |
1/2 cup alfalfa sprouts |
Directions:
1. Taost the sesame seeds, sunflower kernels and cashews separately then mix together and keep 2. Shred the radicchio leaves 3. Slice the celery and spring onions diagonally 4. Blanch the fresh corn and snow peas for 1-2 mins Drain and refresh in cold water and pat dry slice prepared corn in half lengthways or drain and rinse baby corn and pat dry, 5. Finley chop ginger 6. Heat oils, add ginger and chicken brown breaking up with fork 7. Remove from heat, stir in honey,oyster sauce and soy sauce into chicken. Toss with prepared vegies and sprinkle with toasted seeds and nuts 8. Serve immediately while just warm |
