A light chicken salad recipe. Ingredients:
1/2 cup diced cooked chicken breast meat |
2 tablespoons soy sauce |
3 tablespoons rice vinegar |
1 1/2 tablespoons white sugar |
1/2 cup peanut oil |
3 green onions, minced |
1 (3 ounce) package ramen noodles - cooked, drained and chilled |
Directions:
1. In a small bowl combine the soy sauce, vinegar, sugar and peanut oil. 2. In a medium sized bowl toss the dressing with the chicken, scallions and noodles. Chill and serve. |
