This recipe is delicious! The sesame oil gives it a nutty and unusual flavor. I just made it for a picnic I'm going to. After tasting it, I know it's a salad I'll be making many more times. From the cookbook Lean and Luscious and Meatless. Ingredients:
2 cups carrots, shredded |
1/4 cup green pepper, finely minced |
2 teaspoons sesame oil |
2 teaspoons vegetable oil |
1 tablespoon lemon juice |
1 teaspoon lemon juice |
1 tablespoon soy sauce |
1/8 teaspoon ground ginger |
1 teaspoon sugar |
1 dash garlic powder |
1 tablespoon toasted sesame seeds |
Directions:
1. In medium bowl, combine carrots and green pepper. 2. In a small bowl, combine remaining ingredients. 3. Add to carrots, mixing well. 4. Chill several hours to blend flavors. 5. (To toast sesame seeds, place them in a shallow pan in a 350 degree oven for 15 minutes, or until lightly toasted, stirring occasionally.). |
