I love this quick and easy way to prepare squash. Ingredients:
1 acorn squash, halved, seeded & scrapped |
3 tablespoons lemon juice |
2 tablespoons honey |
1 tablespoon soy sauce |
1/2 tablespoon grated fresh ginger |
Directions:
1. Place squash halves cut-side down in a baking dish with 1/2 of water. 2. Bake for 30 minutes at 400 degrees. 3. Remove and turn halves cut-side up in baking dish. 4. In bowl mix sauce ingredients. Spoon mixture into the cavity of each squash halve. 5. Return to oven and bake 10 more minutes. Serve warm. |
