Organic Canned Tomato Soup |

This organic soup can be cooked up from ingredients in your pantry. As with the classic Campbell's this soup makes the perfect grilled cheese dipper. Ingredients:
1 organic yellow onion, diced |
1 clove organic garlic, minced |
1 stalk organic celery, diced |
2 tbsp organic olive oil |
1 large can (796 ml/ 28 oz) whole organic plum tomatoes |
2 cups organic chicken or vegetable stock |
1/4 tsp each organic dried basil and oregano |
1 tsp organic chili powder |
1/2 - 1 tsp organic cane sugar |
salt & freshly cracked black pepper (you guessed it, organic) |
Directions:
1. Heat olive oil in sauce-pan over medium-low heat; sweat the onions, garlic and celery, stirring often until softened (about 10 minutes). 2. Add 1 cup of the stock, canned tomatoes with juices and the herbs and chili powder. Raise the heat to medium-high and bring the soup to a boil. Lower the heat to low and simmer, covered for about 25 minutes. Uncover the pan and let cool briefly. 3. Blend soup with a hand-blender until smooth, adding extra cup of stock to desired consistency. Gently reheat. Taste soup, if it tastes too acidic add 1/4 tsp sugar and taste again, adding the rest if necessary. Season to taste with salt and pepper and enjoy. |
