Easy One Dish Meals by Barbara C. Jones. Tastes just like an Oreo, but better. This cake is fragile even after it cools so be careful. Ingredients:
1 (18 ounce) box white cake mix |
1/3 cup oil |
1 1/4 cup water |
4 egg whites |
1 1/4 cup coarsely crushed oreo cookies |
you can add a tsp of almond extract to the batter--it doesn't call for it, but it helps the flavor. |

4 1/2 cups powdered sugar |
1 cup butter, softened |
1 cup shortening (do not use butter flavor shortening) |
1 tsp almond extract (or to taste), i added a 1 1/4 tsp of extract to the icing) |
1/4 cup crushed oreo cookies |
1/4 cup chopped pecans |
Directions:
1. Cake: 2. Preheat oven to 350 degrees. Spray or butter cake pans (8 or 9-inch). 3. Combine cake mix, 1 1/4 cups water, oil, and egg whites in large mixing bowl. Blend to low speed until moist. 4. Beat for 2 minutes at high speed and gently fold in coarsley crushed cookies. 5. Pour batter into prepared pans and bake for 25-30 minutes or until toothpick inserted in center comes out clean. Cool for 10 minutes, remove from pan and cool. 6. Icing: 7. Beat all ingredients except crushed cookie pieces and pecans. Frost first layer, place second layer on top and frost top and sides. Sprinkle crushed Oreo cookies and pecans on top. |
