Oregon Mushroom Brie Soup

A creamy, rich soup that looks, smells and tastes wonderful.
Ingredients:
1 pound brie
1 1/2 pounds shitake mushrooms
2 tbs shallots, diced
2 oz butter
1/2 bottle champagne
1/2 gallon chicken stock
1 cup milk
2 tbs dijon mustard
4 oz cornstarch
1/2 quart cream
chopped onions, for garnish (if desired)
Directions:
1. Remove rind from Brie and break into small pieces
2. Rinse, slice and saute mushrooms and shallots in buttered stockpot for 1 minute.
3. Add half the champagne and bring to a boil.
4. Add stock and milk and return to boil.
5. Add mustard
6. Mix cornstarch with remaining champagne til dissolved and add to boiling soup, whipping to ensure no lumps.
7. Once it returns to a boil, turn down flame and slowly add Brie. stirring constantly.
8. Slowly add cream and serve.
9. Garnish with chopped green onions, if desired.
