Wonderful with your morning coffee! Recipe makes one loaf..... Ingredients:
3c. all-purpose flour |
2/3c. sugar |
1tsp. baking soda |
2 eggs, beaten |
8oz. lemon lowfat yogurt |
1/3c. vegetable oil |
1tsp. grated lemon zest |
15oz. can del monte lite fruit cocktail, drained |
1/2c. finely chopped pecans or walnuts |
Directions:
1. Preheat oven to 350F. Combine flour, sugar and baking soda; mix well. 2. Blend eggs with yogurt, oil and lemon zest. Add dry ingredients along with fruit cocktail and nuts; stir just enough to blend. Spoon into greased 9x5 inch loaf pan. 3. Bake 65 minutes or until wooden pick inserted into center comes out clean. Let stand in pan 10 minutes. Turn out onto wire rack; cool completely. |
