Pumpkin poppyseed cake with light citrys glaze Ingredients:
one pkg (18 1/4oz) yellow cake mix |
1 1/4 c libby's 100% pumpkin |
2/3 c orange juice |
3 eggs |
1/4 c poppy seeds |
grated citrus peel to taste if desired |
orange glaze |
1 1/2 c sifted powdered sugar |
3 t orange juice |
Directions:
1. Combine cake mix, pumpkin, orange juice and eggs (and citrus peel if desired) in a large mixer bowl. Beat on low speed for 30 seconds to mix. Beat on medium speed for 2 minuts. Add poppy seeds, mix until blended. Spread batter into greased and floured 12-cup fluted tube pan or use Joy of Baking or similar floured spray with 12-cup tube pan. 2. Bake in a preheated 350F oven for 35 to 40 minutes or until a toothpick comes out clean when inserted into cake. Cool in pan on wire rack for 10 minutes; invert onto wire rack to cool completely. Pour orange glaze over cake. 3. Orange glaze: Combine powdered sugar and 2-3 T orange juice in small bowl until smooth. Pour over cake. |
